Yup.... I'd go with the battery getting to the end of it's life theory !!
From memory, I believe that the output of an alternator is greatest at low rpm and drops off at higher rpm. Combine this with sustained high speed running and a tired battery, and you could get the situation you describe. Most batteries will recuperate to some extent after being run near flat. Adding water should not make that much difference, unless the cell was nearly dry... but you could get lucky  As suggested above, check with another battery to see if things improve.
